He is Filipino, and his family is always using corned beef in their recipes, so he gets tired of it easily. However, we both really liked this frittata! The corned beef isn’t too overpowering, and it’s the perfect meal for brunch or breakfast! Thank you for this wonderful recipe! I’m going to make this in the future 🙂

I did this fritata today much to the joy and surprise of my family. My son is mad about corned beef but I cook it the same boring way. I searched on Kawaling Pinoy for a different way to dish it out and found your fritata. It's a blockbuster!
In the oven now are pork belly skins, getting dehydrated. Will line them up in a tray, refrigerate overnight, then fry them tomorrow. Got the recipe from Kawaling Pinoy, too. I hope to get the crunchiness I want.

Yes, just put the heat on low and then cover your pan to continue cooking until the frittata sets. Enjoy!
