Very similar to my ex's (she was a Pinay)! She never used raisins or egg though. I roasted my bone-in chicken like she did for pancit canton in a vinegar, sugar, ginger and "golden mountain" soy sauce like she used to. She would make the mac salad if she had too much chicken leftover. "Just like Ex used to make" lol. The only difference is she added a few dashes of cayenne to jazz it up.

I am just wondering about the crushed pineapple... do you use all the pineapple juice from the can or just lightly drain it first and not squeeze out all the juice? Thank you!!

I don't get the addition of condensed milk, to be honest. It's not dessert. You get enough sweetness from the tart pickles and raisins to cut the richness so adding it (which is also rich and thick) is superfluous. Everything else is fine. I will follow your recipe but I will omit that. But thank you for the recipe.

I make it at home and my husband loves it...and so with his buddy...he loves to come to the house when I have the macaroni salad. My husband and his buddy are whites.....

In reply to AndyNY. It’s not Filipino macaroni salad if you skip the condensed milk. It’s to be sweet. You should judt made the Hawaiian version. Also, I prefer the simple version. just the macaroni, condensed milk, mayo, raisins, and eden cheese.

In reply to Lalaine Manalo. Maybe, just maybe... you jot down 16oz because available pack size (and is written in the packaging) of Elbow Macaroni is 16oz and not 1lb. And standard weight of dressed chicken is in lb. or kg. and not by the oz. or gm. No problem really. Thanks for the recipes...
