The acids in the marinade (lemon, calamansi, vinegar etc) will tenderize and break down the protein fibers of the meat given enough time, and that is science. In fact, that is how digestion works. Your stomach's hydrochloric acids and enzyme proteases denature protein into smaller chains of amino acids. But, of course, you can marinate as long as you want. It's your meat 🙂

I beg to differ. Marinating it overnight is better than under 8 hours. It does not cause the meat to become mushy. It has been tried and tested.
