I need to redo because I was not able to find the recommended long eggplant and had to fall back on the smallest globe variety I could find, so I think that may have made the skin tougher than what is desired. Other than that it was a good combination of flavors

Generally I have a few favourite foods that I can't pinpoint which is the top, but I can say this now, this is my ultimate favourite of them all! If I have a huge stomach I can eat it all by myself! I literally cook this once a week, I don't care what my kids think, if they don't eat it, oh well more for me! 😁 Thank you so much for sharing this great recipe. Maraming salamat Ate😍
