my husbands parents used to make what they called "burnt sugar syrup" to use on pancakes in place of expensive maple syrup. They put plain white cane sugar into a cast iron skillet and slowly heated and stirred it till it liquified and turned medium amber color. It is very tasty!

**I love browsing your recipes and tips--am 74 years old and still cooking and baking, and have learned much from you! thank you from California

If you followed the instructions to a T, then it wouldn't have burned.

"Microwave on high for about 6 to 7 minutes or until color changes to honey-gold. Use immediately."

and

"As microwaves vary in wattage, you may need to watch the caramel and adjust the cooking time accordingly.

I'm sorry the method didn't work for you. Contrary to your experience, this hack works. It could not have burnt to black if you followed the instructions to a T and didn't leave it too long in the microwave. It could also be because of your microwave as wattages do vary.

Excellent. Just take into consideration, that if you have smaller portion you need to reduce the time. Got caramelized sugar for fruits in 1:40, perfect, no pans, no mess;)

Followed instructions to a T and ended up with a burnt black monstrosity. Had to throw the bowl away, NOT how you make caramel, obviously

In reply to Lalaine Manalo.

That didn't answer questions on the bowl material or wattage of your microwave. I tried thick Tupperware and Pyrex glass. Both containers had structural issues. I love this trick. I just don't want to buy a new Pyrex every time I want to make a flan.
And I can't watch it. It's mounted above the stove. Anyone else have this issue? Help.

Dear Lalaine.
Thank you for bringing caramelizing sugar from the stone age, into the 21st century. Much, much easier.

When the caramel finished cooking, I removed it immediately from the microwave. The sudden change in temperature caused the bowl to shatter and the caramelized sugar is glued all over the kitchen floor with bits of glass imbedded into it. Ugh! I have been working on cleaning this awful mess up for about an hour now. . . .
I recommend letting it stand in the microwave with the door open to cool slightly BEFORE removing it.
It sure looked good, even though I didn't get to taste it.

It seems to coat more evenly and doesn't harden as quickly before I get that even coating.
