If there's an egg or straining of bones. It's not authentic. This is not for the ilonggo

No true and proud ilonggo would put an egg on a batchoy.

The broth though is a mix of chicken, beef and pork. Whatever meat is available. Guinamos (the quickest and closest available in the market is barrio fiesta bagoong yellow). And fresh NOT dried fried garlic (local small cloved if available). No MSG please. JUST A balance mix of sugar, salt and pepper.

But I understand that some formal training may pollute the recipe (i.e. blanching, cleaning the bones). I have yet to see a bone marrow or a fatty batchoy soup. No onions please.

Although lapaz batchoy soup is a little bit on the garlic, peppery with the shrimpy taste. It was not meant to be balanced.

But hey, cooking is an art.
