Hello, Daniel,

I'm sorry to hear the recipe didn't work well for you. Rellenong manok does take a bit of work, and yes, it can burst if overstuffed. The stuffing will be a little loose and wet when fresh out of the oven. The roast has to rest for a few minutes before cutting to allow the juices to redistribute and for the stuffing to firm up.

Thankfully, no one at dinner was Filipino and had no idea how badly things had gone. I’m thinking I must have over stuffed it and possibly didn’t sew it well enough? I added celery to the stuffing but otherwise followed it it a tee with a 5+lb bird. I had a lot of stuffing leftover too. I’m also wondering if I had too much moisture in the stuffing? It didn’t have quite the meatball texture. It was wetter than that. Do you have any thoughts?

Hi Gem,

I haven't personally tried it but yes, you can definitely fry the chicken. It's actually the traditional way of making relleno especially since the oven was not widely available then. Try not to overfill too much so the skin doesn't burst.
