In the Instructions for preparing the Bola-bola filling, Green Onions were typed twice. However, Oyster Sauce was not included. A typo?

Hi I’ve followed your instructions carefully and was excited about being able to make siopao. both Asado and bolabola with satisfying taste but I’ve failed what went wrong to the dough as it’s turned chocolate when cooked instead of white. Other than that I did it good, texture and taste.
Can you tell me what trigger the change of dough colour. No food colouring involved except oyster sauce, soy sauce and hoisin

Siopao dough ingredient - Instant DRY yeast.
Either instant yeast or active dry yeast. Which one should I use? Thank you for your response. Much appreciated
